Sloppy Jose Recipe - Low Carb & Healthy

- 1 pound (455 g) ground beef
- 1 cup (240 g) salsa (mild, medium, or hot, as you prefer)
- 1 cup (115 g) shredded Mexican-style cheese
In a large skillet, crumble and brown the ground beef and drain off the fat.
Stir in the salsa and cheese and heat until the cheese is melted.
About 4 servings
Each with 4 grams of carbohydrates and 1 gram of fiber, for a total of 3 grams of usable carbs and 27 grams of protein. Variation: Mega Sloppy Jose. Try adding another cup (120 ml) salsa and another cup (60 g) cheese. Each with 6 grams of carbohydrates and 2 grams of fiber, for a total of 4 grams of usable carbs and 30 grams of protein. This is good with a salad or even on a salad. Of course, if you have carb-eaters around, they'll love the stuff on some corn tortillas.
