  2. 1 black avocado, peeled and diced
  3. green bell pepper, diced
  4. 8 kalamata olives, pitted and chopped
  5. 4 scallions, thinly sliced, including the crisp part of the green shoot
  6. Sun-Dried Tomato
  7. Basil Vinaigrette

Cooking Instructions

Cut your cauliflower in roughly -inch (1.

3-cm) chunks.

Put it in a microwaveable bowl, add 1 tablespoon (15 ml) of water, and cover.

Microwave on high for 7 minutes.

When the cauliflower is ready, drain it and dump it in a mixing bowl.
