- head red cabbage
- head cabbage
- 3 tablespoons (45 ml) olive oil
- Salt and pepper
- 2 tablespoons (30 ml) balsamic vinegar
Preheat oven to 450F (230C, or gas mark 8).
Coarsely chop the two kinds of cabbage and separate the leaves.
Put it in a good-sized roasting pan and toss it with the olive oil until it's coated all over.
Sprinkle with salt and pepper and toss again.
Put the cabbage in the oven and roast for 15 to 20 minutes, stirring once or twice, until it's just browning around the edges but still not entirely limp.
Sprinkle with the balsamic vinegar, toss again, and serve.
