Greek Spinach Recipe - Low Carb & Healthy

- 1 tablespoon (14 g) butter
- small onion, minced
- 1 package (10 ounces, or 280 g) frozen, chopped spinach, thawed
- cup (40 g) crumbled feta cheese
- cup (55 g) cottage cheese
Melt the butter in a heavy skillet over medium heat.
Add the onion and let it sizzle for just a minute.
Add the spinach and saute, stirring now and then, for 5 to 7 minutes.
Add in the cheeses and stir until they start to melt.
Let the spinach cook for another minute or so and then serve.
Each with 6 grams of carbohydrates and 3 grams of fiber, for a total of 3 grams of usable carbs and 7 grams of protein.
