Ingredients Needed

  1. 2 tablespoons (28 g) butter
  2. 1 teaspoon curry powder
  3. 1 package (10 ounces, 280 g) frozen, chopped spinach, thawed
  4. 1 teaspoon salt or Vege-Sal
  5. cup (75 g) small-curd cottage cheese
  6. 2 teaspoons sour cream

Cooking Instructions

Melt the butter in a heavy skillet over low heat and stir in the curry powder.

Let the curry powder cook in the butter for 3 to 4 minutes.

Stir in the spinach and the salt.

Cover the skillet and let the spinach cook for 4 to 5 minutes or until heated through.

Stir in the cottage cheese and sour cream and cook, stirring, until the cheese has completely melted.
