California Soup Recipe - Low Carb & Healthy

- 1 large or 2 small, very ripe black avocados, pitted, peeled, and cut
- into chunks
- 1 quart (960 ml) chicken broth, heated
Put the avocados in a blender with the broth, puree until very smooth, and serve.
6 servings (as a first course)
Each with 3 grams of carbohydrates and 1 gram of fiber, for a total of 2 grams of usable carbs and 4 grams of protein. If you like curry, you've got to try this: Melt a tablespoon (14 g) or so of butter in a small saucepan and add teaspoon or so of curry powder. Cook for just a minute and then add the mixture to the blender with the broth and avocados.
