Curried Pumpkin Soup Recipe - Low Carb & Healthy

- cup (40 g) minced onion
- 1 clove garlic
- 1 tablespoon (14 g) butter
- 1 quart (960 ml) chicken broth
- 1 cups (240 g) canned pumpkin
- cup (120 ml) Carb Countdown dairy beverage
- 2 teaspoons curry powder
- Salt and pepper to taste
In a large, heavy-bottomed saucepan, over medium-low heat, saute the onion and garlic in the butter until just softened.
Add the chicken broth and simmer for a half an hour.
Stir in the canned pumpkin, Carb Countdown dairy beverage, and curry powder.
Bring back to a simmer and simmer gently for another 15 minutes.
Add salt and pepper to taste and then serve.
