Ingredients Needed

  1. cup (40 g) minced onion
  2. 1 clove garlic
  3. 1 tablespoon (14 g) butter
  4. 1 quart (960 ml) chicken broth
  5. 1 cups (240 g) canned pumpkin
  6. cup (120 ml) Carb Countdown dairy beverage
  7. 2 teaspoons curry powder
  8. Salt and pepper to taste

Cooking Instructions

In a large, heavy-bottomed saucepan, over medium-low heat, saute the onion and garlic in the butter until just softened.

Add the chicken broth and simmer for a half an hour.

Stir in the canned pumpkin, Carb Countdown dairy beverage, and curry powder.

Bring back to a simmer and simmer gently for another 15 minutes.

Add salt and pepper to taste and then serve.
