Ingredients Needed

  1. 4 cups (800 g) sliced peaches
  2. cup plus 1 tablespoon (7.5 g) Splenda, divided
  3. cup (50 g) polyol sweetener
  4. 1 tablespoon (15 ml) lemon juice
  5. 8 tablespoons (115 g) butter, divided
  6. cup (60 g) almond meal
  7. cup (65 g) vanilla whey protein powder
  8. 2 teaspoons baking powder
  9. 1 teaspoon salt
  10. cup (120 ml) heavy cream

Cooking Instructions

Preheat oven to 375F (190C, or gas mark 5).

Spray an 8 8-inch (20 20-cm) baking pan with nonstick cooking spray.

In a mixing bowl, combine the sliced peaches (I use unsweetened frozen peach slices, which saves lots of time and trouble, and since they're going to be cooked, it makes no difference in the final texture), cup (6 g) Splenda, polyol sweetener, and lemon juice.

Toss everything together and spread evenly in the pan.

Spread the batter evenly over the peaches and bake for 30 minutes or until the crust is crisp and evenly golden brown.

Serve warm.
